History of French Settlement Sausage & Smokehouse

French Settlement Sausage was purchased in March of 2010.  French Settlement Sausage is managed by longtime and original residents of Gonzales, Louisiana. (Originally the LeBlanc family now married into the Beach family).  The Smokehouse is managed by a nephew, Johnathon Gautreau.  The original smokehouse which rests off Hwy 16 in French Settlement burned to the ground in 2006.  The new facility was immediately rebuilt.  French Settlement Sausage & Smokehouse has been revamped since the new “locals” purchased the facility.  New smokers have been installed, larger coolers have been set in place and updated equipment has been purchased, setting the foundation to produce products which have their own individuality.  We wanted to create an authentic flavor using a combination of exquisite seasons and the aroma of hickory smoke. We strive to create a sausage of unsurpassed quality.  Our goal is to have high qualityHickory Smokin’ Good….” products our customers will be honored to serve their guests.

Due to sanitation requirements we are unable to give tours of the facility.  Besides the family secrets need to be kept “secret”.  However, you will experience the Hickory aroma when opening one of our vacuumed pack products.  Our products are vacuumed packed to ensure quality freshness.  Our products are prepared with the freshest meats, onions and spices.  French Settlement Sausage & Smokehouse products contain no MSG, no additives or fillers (such as cereal, soy flour, dried-milk, liquid smoke).  Unless shipped, our products are always fresh, never frozen.
