History of French Settlement Sausage & Smokehouse

The original smokehouse, which rests off Hwy 16 in French Settlement, burned to the ground in 2006.  The new facility was immediately rebuilt. New smokers have been installed, larger coolers have been set in place and updated equipment has been purchased, setting the foundation to produce products which have their own individuality.  We wanted to create an authentic flavor using a combination of exquisite seasonings and the aroma of hickory smoke. We strive to create a sausage of unsurpassed quality.  Our goal is to have high qualityHickory Smokin’ Good….” products our customers will be honored to serve their guests.

Due to sanitation requirements we are unable to give tours of the facility.  Besides the family secrets need to be kept “secret”.  However, you will experience the Hickory aroma when opening one of our vacuumed pack products.  Our products are vacuumed packed to ensure quality freshness.  Our products are prepared with the freshest meats, onions and spices.  French Settlement Sausage & Smokehouse products contain no MSG, no additives or fillers (such as cereal, soy flour, dried-milk, liquid smoke).  Unless shipped, our products are always fresh, never frozen.

Andouille – a Must for gumbo and red beans.  A juicy, tasty plump combination of well seasoned pork heavily smoked to perfection.

Sausage:

Hot Sausage – Turn on the heat in Cajun country. Quality lean ground pork with an array of spices leaves you with a pleasing, mild heat lingering taste on your tongue.

Mild Sausage – A blend of select meats and tantalizing spices packed tightly in a natural casing, and then timely smoked to enhance the flavor.

Green Onion – Ground pork complemented by a mixture of onions and other savory spices used to enhance beans, gumbo and jambalayas.

We have new products on the horizon and we are always gathering a mixture of family recipes to appeal to your appetite.  We gladly accept any suggestions and family “secret ingredients” you are willing to share.  We promise to make them Hickory Smokin’ Good….”

We would like to say thanks!

Thanks to WAFB for our segment on the French Settlement “Road Trip”.  We appreciate everyone that was brave enough to weather the storm.  Lots of good food and people.
